  • 2 medium beetroots, peeled and cubed
  • 300 grams Arborio or Carnaroli rice
  • 200 grams mushrooms (button or cremini), sliced
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 200 ml beetroot juice
  • 800 ml vegetable stock, hot
  • 100 grams soft goat cheese (chèvre)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 pinch salt and black pepper
  • 9 Copious Wine
