  • 1 cup yellow split lentils (Toor Dal or Moong Dal)
  • 3 cups water (for cooking lentils)
  • 2 tbsp vegetable oil or ghee
  • 1 tsp cumin seeds
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 large tomato, chopped
  • 0.5 tsp turmeric powder
  • 1 tsp ground coriander
  • 0.5 tsp red chili powder (adjust to taste)
  • 2 cups fresh spinach, chopped
  • 0.75 cup green peas (fresh or frozen)
  • 1 tsp salt
  • 0.5 tsp garam masala
