  • 1 large cluster pink oyster mushrooms, sliced
  • 3 handfuls diced chicken thighs
  • 2 fat stalks leeks, sliced into rounds
  • 1 heap pancetta or bacon lardons
  • 2 mugfuls Arborio or Carnaroli rice
  • 1 healthy glug extra virgin olive oil
  • 1.5 litres hot vegetable or chicken stock
  • 1 generous knob unsalted butter
  • 1 big handful freshly grated parmesan cheese
