  • 4 large Maris Piper or Russet potatoes
  • 1 liter vegetable oil (for frying)
  • 2 tbsp olive oil
  • 1 large beef tomato
  • 50 grams fresh rocket (arugula)
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 tablespoon green peppercorns (in brine)
  • 100 ml beef stock
  • 50 ml double cream
  • 1 pinch sea salt and freshly ground black pepper
