  • 1 large eggplant (aubergine), sliced into rounds
  • 1 medium zucchini (courgette), sliced into rounds
  • 1 medium red onion, sliced into thick wedges
  • 1 generous glug olive oil for roasting
  • 1 pinch salt and cracked black pepper
  • 1 big dollop tahini
  • 0.5 squeeze fresh lemon juice for the sauce
  • 1 splash warm water to thin the sauce
  • 1 swig extra virgin olive oil for the dressing
  • 2 cloves garlic, finely minced
  • 1 squeeze lemon juice for the garlic oil
  • 2 large wholemeal pita breads
