  • 2 hefty mugs red lentils
  • 1 swig vegetable oil
  • 2 sticks cinnamon
  • 10 pods green cardamom
  • 1 generous pinch cumin seeds
  • 1 generous pinch coriander seeds
  • 2 chopped red onions
  • 3 fat cloves garlic, minced
  • 1 thumb fresh ginger, grated
  • 8 large tomatoes, roughly chopped
  • 0.5 can coconut milk
  • 2 large handfuls frozen peas
  • 2 big fistfuls fresh spinach
  • 1 potful water or vegetable stock
