  • 1 standard pack ground chicken
  • 1 medium zucchini, grated and squeezed dry
  • 1 palmful breadcrumbs
  • 1 heaping pinch ground cumin
  • 1 heaping pinch ground coriander
  • 1 large glug olive oil
  • 1 large red bell pepper, sliced into strips
  • 1 large yellow bell pepper, sliced into strips
  • 1 medium onion, thinly sliced
  • 1 mug's worth tomato passata or crushed tomatoes
  • 1 mug pearl (giant) couscous
  • 1.5 mugs chicken or vegetable stock
  • 1 heavy dollop Greek yogurt
  • 1 handful crumbled feta cheese
