  • 1 big hunk ground beef
  • 2 medium red onions, sliced into half-moons
  • 2 medium red bell peppers, chopped
  • 1 generous handful sweet corn kernels
  • 1 small tin kidney beans, drained and rinsed
  • 1 glug olive oil
  • 1 heavy dusting taco seasoning (chili powder, cumin, and garlic)
  • 4 large scoops cooked long-grain white rice
  • 1 massive handful shredded white cheddar or Monterey Jack cheese
  • 1 giant dollop fresh guacamole
