Beetroot rostis is part of an old mob recipe I remember from years ago. Meant to have guac and poached eggs and is a breakfast meal. But here it's dinner!

  • 4 Large beetroots, raw and grated
  • 2 large egg (optional binder)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp Sesame oil (for frying)
  • 250 grams firm tofu, cubed
  • 2 tbsp Thai green curry paste
  • 400 ml coconut milk
  • 1 cup green vegetables (green beans, sugar snap peas, or mange tout)
  • 1 tbsp soy sauce (or tamari)
  • 1 Tsb Paprika
  • 1 Tsb Coriander
  • 1 Tsb Chilli flakes
