- •1 thumb fresh ginger, grated
- •2 tbsp Caribbean curry powder
- •1 tsp turmeric powder
- •0.5 tsp ground cumin
- •1 whole Scotch bonnet pepper (optional, for heat)
- •3 sprigs fresh thyme
- •1 can (400ml) coconut milk
- •2 tbsp vegetable oil
- •1 pinch salt and black pepper
