  • 2 medium aubergines (eggplants), cut into chunks or half-moons
  • 1 can (400g) mixed beans (kidney, black-eyed peas, pinto), drained and rinsed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 thumb fresh ginger, grated
  • 2 tbsp Caribbean curry powder
  • 1 tsp turmeric powder
  • 0.5 tsp ground cumin
  • 1 whole Scotch bonnet pepper (optional, for heat)
  • 3 sprigs fresh thyme
  • 1 can (400ml) coconut milk
  • 2 tbsp vegetable oil
  • 1 pinch salt and black pepper
