  • 2 swigs red wine
  • 1 handful red onions, thickly sliced
  • 1 handful carrots, sliced into rounds
  • 1 basket potatoes, peeled and cubed
  • 2 dollops duck fat or unsalted butter
  • 1 bunch white asparagus, peeled
  • 1 small handful capers
  • 1 handful fresh flat-leaf parsley, chopped
  • 4 pinches sea salt
  • 3 fingers cracked black pepper
