- •500 grams fresh beetroots, peeled and diced
- •1 large onion, chopped
- •2 tbsp olive oil or vegetable oil
- •1 liter vegetable stock
- •2 cloves garlic, minced
- •1 tbsp lemon juice or apple cider vinegar
- •1 tsp dried herbs (marjoram or herbes de provence)
- •100 ml Sour cream (plus extra for garnish)
- •150 grams feta cheese or white cheese, crumbled
- •1 pinch salt and black pepper
