  • 500 grams fresh beetroots, peeled and diced
  • 1 large onion, chopped
  • 2 tbsp olive oil or vegetable oil
  • 1 liter vegetable stock
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp dried herbs (marjoram or herbes de provence)
  • 100 ml Sour cream (plus extra for garnish)
  • 150 grams feta cheese or white cheese, crumbled
  • 1 pinch salt and black pepper
