  • 2 mugs water or vegetable broth
  • 2 handfuls fresh flat-leaf parsley, finely chopped
  • 1 small bunch fresh cilantro, finely chopped
  • 1 finger-length red chili, deseeded and minced
  • 2 fat cloves garlic, crushed
  • 1 healthy glug extra virgin olive oil
  • 1 splash red wine vinegar
  • 1 generous pinch flaky sea salt
  • 2 big handfuls lamb’s lettuce (mâche)
  • 2 large dollops Greek yogurt or sour cream
