  • 1 good glug olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, smashed
  • 2 handfuls Italian sausage meat, crumbled
  • 1 punnet mushrooms, roughly sliced
  • 1 large tin crushed tomatoes
  • 1 generous dollop tomato paste
  • 1 pinch dried oregano
  • 1 handful fresh basil leaves, torn
  • 1 mountain grated parmesan cheese
  • 1 pinch salt and cracked black pepper
