  • 0.5 lbs ground beef (for pelmeni)
  • 0.5 lbs ground pork (for pelmeni)
  • 3 liters water
  • 4 medium beets, peeled and grated
  • 3 medium potatoes, cubed
  • 0.5 small head cabbage, shredded
  • 2 medium carrots (1 for broth, 1 grated for sauté)
  • 3 medium onions (1 for broth, 1 chopped for soup, 1 minced for filling)
  • 3 tbsp tomato paste
  • 3 cups all-purpose flour
  • 1 large egg
  • 0.5 cup water (for dough)
  • 1 bunch fresh dill, chopped
  • 2 tbsp lemon juice or vinegar
  • 4 tbsp butter (for serving)
  • 3 cloves garlic, minced
  • 1 pinch salt and black pepper
