  • 500 grams Beef leg or shoulder, diced into small cubes
  • 2 large onion, finely chopped
  • 15 cloves garlic, minced
  • 1 tbsp tomato paste
  • 400 grams canned crushed tomatoes or diced fresh tomatoes
  • 1 cup hot water or beef stock
  • 4 items medium eggplants (aubergines)
  • 2 tbsp butter (for the puree)
  • 2 tbsp all-purpose flour
  • 1.5 cups warm milk
  • 0.5 cup grated Kasseri, Gruyère, or Mozzarella cheese
  • 1 bunch tenderstem broccoli (broccolini)
  • 2 tbsp olive oil
  • 1 tsp dried oregano or thyme
  • 1 pinch salt and black pepper
