  • 2 cups arborio rice
  • 1.5 litres chicken stock
  • 200 g smokey bacon, diced
  • 2 whole red bell peppers, roasted and diced
  • 1 Tin cherry tomatoes, tinned
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 knob butter
  • 1 swig olive oil
  • 2 cups leftover roast chicken, shredded
  • 2 handfuls shredded cheddar cheese
  • 1 bag mixed salad greens
  • 4 Tsp Dried herbs - Rosemary, thyme, sage, oregano etc
