  • 1 glug vegetable oil
  • 1 medium red onion, sliced
  • 2 fat cloves garlic, minced
  • 1 thumb-sized piece ginger, grated
  • 2 whole red bell peppers, chopped into rustic chunks
  • 1 heaped spoonful curry powder
  • 1 pinch chili flakes
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tin (400g) chopped tomatoes
  • 1 generous pour (400ml) full-fat coconut milk
  • 1 squeeze lime juice
  • 1 handful fresh coriander, for garnish
