  • 2 generous handfuls spaghetti
  • 1 thick handful guanciale or pancetta, diced
  • 3 large egg yolks
  • 1 large whole egg
  • 2 handfuls grated Pecorino Romano or Parmesan
  • 1 small bunch fresh asparagus, woody ends trimmed
  • 2 cloves garlic, finely chopped
  • 1 swig extra virgin olive oil
  • 1 pinch sea salt
  • 12 cracks freshly ground black pepper
