  • 3 big potatoes, peeled and cubed
  • 1 glug vegetable oil
  • 2 heaped spoonfuls biryani masala spice mix
  • 2 fistfuls fresh coriander, roughly chopped
  • 1.5 mugs brown lentils, rinsed
  • 1 splash heavy cream or coconut milk
  • 1 thumb-sized piece fresh ginger, grated
  • 2 cloves garlic, finely minced
  • 1 shake turmeric powder
  • 1 dusting ground cumin
  • 1 pinch sea salt
