  • 2 units shallots, finely diced
  • 4 cloves garlic, smashed and minced
  • 1 unit red chili, finely sliced
  • 1 swig extra virgin olive oil
  • 1 dollop unsalted butter
  • 1 jar tomato passata or high-quality marinara sauce
  • 1 heavy swig double cream
  • 1 handful grated parmesan cheese
  • 1 pinch sea salt and cracked black pepper
  • 1 fistful fresh flat-leaf parsley, chopped
