  • 1 bag (500g) organic durum wheat semolina
  • 4 large eggs
  • 1 dollop sourdough discard (optional, for that supper club tang)
  • 1 generous bowlful peas (fresh or blanched frozen)
  • 2 massive handfuls fresh basil leaves
  • 1 big ball fresh mozzarella, torn into bits
  • 1 good pinch sea salt
  • 1 glug extra virgin olive oil
  • 1 splash cold water
