  • 50 g unsalted butter, melted and cooled

  • 60 g extra caster sugar (for custard)

  • 80 g unsweetened 100% pistachio paste

  • 250 g mascarpone cheese, chilled
  • 40 g icing sugar, sifted
  • 200 g dark chocolate (70% cocoa), finely chopped
  • 200 ml extra double cream (for ganache)
