  • 1 heaped bowlful frozen New Forest porcini mushrooms, sliced
  • 1 generous knob salted butter
  • 1 glug extra virgin olive oil
  • 3 fat cloves garlic, finely minced
  • 1 slosh dry white wine
  • 1 heavy dollop crème fraîche or double cream
  • 1 large handful fresh flat-leaf parsley, roughly chopped
  • 1 mountain parmesan cheese, for grating
  • 1 pinch sea salt and coarse black pepper
  • 1 head little gem lettuce
