  • 200 grams dried flat rice noodles
  • 1 tbsp vegetable oil
  • 0.5 cup vegetarian laksa paste (or red curry paste)
  • 4 cups vegetable stock
  • 400 ml coconut milk (1 can)
  • 250 grams firm tofu, sliced into rectangles
  • 200 grams mushrooms (cremini or button), sliced
  • 1 items red bell pepper, sliced into strips
  • 3 items heads of bok choy (pak choi), quartered
  • 1 tbsp soy sauce (to taste)
  • 1 tbsp lime juice
  • 2 items green onions (scallions), chopped for garnish
