  • 2 large breasts chicken breast, diced into bite-sized chunks
  • 1 mug jasmine rice
  • 1 can coconut milk (full fat)
  • 3 heaping tbsp red Thai curry paste
  • 1 whole red bell pepper, sliced
  • 1 small onion, finely diced
  • 1 glug vegetable or coconut oil
  • 1 good splash fish sauce
  • 1 pinch brown sugar or palm sugar
  • 0.5 fruit lime (juice only)
  • 1 large handful spring onions (scallions), chopped
  • 1 bunch fresh coriander (cilantro), roughly chopped
