  • 6 whole poisson gris (grey mullet or sardines), cleaned with heads and tails intact
  • 1 hefty slab shortcrust pastry dough
  • 4 whole hard-boiled eggs, sliced in half
  • 3 fistfuls boiled potatoes, roughly sliced
  • 1 knob unsalted butter
  • 1 medium onion, finely chopped
  • 4 rashers smoked bacon, chopped
  • 1 handful fresh parsley, chopped
  • 1 glug heavy cream
  • 1 pinch sea salt and cracked black pepper
  • 1 whole egg, beaten for glazing
