  • 1 large mug cooked quinoa
  • 2 generous handfuls shelled edamame
  • 0.5 block feta cheese, cubed
  • 1 small handful sliced black olives
  • 1 small zucchini, finely diced and lightly sautéed
  • 2 big handfuls chopped baby spinach or flat-leaf parsley
  • 2 glugs extra virgin olive oil
  • 0.5 squeeze fresh lemon
  • 1 pinch sea salt and cracked black pepper
