- •1 small handful sliced black olives
- •1 small zucchini, finely diced and lightly sautéed
- •2 big handfuls chopped baby spinach or flat-leaf parsley
- •2 glugs extra virgin olive oil
- •0.5 squeeze fresh lemon
- •1 pinch sea salt and cracked black pepper
