  • 4 large nests dried pappardelle pasta
  • 2 small shallots, peeled and halved
  • 3 cloves garlic, smashed and minced
  • 1 handful fresh flat-leaf parsley, chopped

  • 1 splash chicken stock
  • 1 generous grating parmesan or pecorino cheese
