  • 800 grams beef shin, diced into 3-4cm chunks
  • 2 tbsp olive oil
  • 2 items large onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 400 grams canned chopped tomatoes
  • 500 ml beef stock
  • 150 grams dried apricots, halved
  • 400 grams canned chickpeas, drained and rinsed
  • 50 grams flaked almonds, toasted
  • 1 handful fresh parsley or coriander, chopped
  • 4 items flatbreads or pita breads
  • 200 grams hummus
  • 100 grams mixed salad leaves
