- •1 heaped pile (approx 800g) beef chuck or stewing steak, cubed
- •1 good glug vegetable oil
- •1 generous knob butter
- •12 whole shallots, peeled
- •2 handfuls carrots, cut into chunky rounds
- •0.5 head celeriac, peeled and chopped into cubes
- •1 basket chestnut mushrooms, halved
- •2 smashed cloves garlic
- •1 tall can stout or dark ale
- •2 mugs beef stock
- •1 bundle fresh thyme and bay leaves
- •2 cups wholemeal self-raising flour
- •1 handful shredded suet or cold grated butter
- •1 finely grated root carrot
- •1 fistful fresh chives, snipped
- •1 swig milk
