  • 1 head cauliflower, cut into bite-sized florets
  • 2 whole ripe plantains, peeled and sliced into chunks
  • 8 whole corn tortillas
  • 2 whole ripe avocados
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 cup sparkling water or beer (plus a splash more if needed)
  • 1 handful red cabbage, thinly shredded
  • 2 whole limes (one juiced, one wedged)
  • 1 dollop mayonnaise
  • 1 tsp sriracha or chipotle paste
  • 1 dollop sour cream or crema
  • 1 pinch black sesame seeds
  • 1 pinch microgreens or cilantro
  • 1 bottle vegetable oil for frying
  • 1 pinch salt and pepper
