- •1 generous bundle thick yellow wheat noodles (Tai Lok Mee)
- •1 handful sliced pork belly or chicken breast
- •6 pieces medium prawns, peeled and deveined
- •1 fistful cabbage, roughly chopped
- •1 puddle rendered lard or peanut oil
- •4 cloves garlic, minced
- •2 heavy glugs dark soy sauce (for color and sweetness)
- •1 splash light soy sauce
- •1 dollop oyster sauce
- •2 ladles rich chicken or pork stock
- •1 pinch white pepper
- •1 sprinkle crispy lard fritters (chu yau char)
