  • 1 hefty mound flat rice noodles (Hor Fun)
  • 1 splash dark soy sauce
  • 1 good glug cooking oil
  • 1 small fistful garlic cloves, minced
  • 0.5 breast's worth chicken breast, thinly sliced
  • 1 generous handful shrimp, peeled and deveined
  • 1 slab fish cake, sliced
  • 1 bunch choy sum or kai lan, cut into sections
  • 2 large bowls chicken stock
  • 2 dollops cornstarch mixed with a little water
  • 2 large units eggs, lightly beaten
  • 1 heavy pinch white pepper
  • 1 tiny swig sesame oil
