pesto tart and potato salad
a summer lunch because it’s summer and no one can tell me otherwise!!! So I was sat by the window and the sun shining on my face i decided it was time for a summer lunch. And then it was dark by 5:30pm This is a pesto tart with homemade pesto (basil, cashew and vegan cheese) and veggies and tofu just on puff pastry easy peasy I’m a firm believer in olive oil, mustard and lemon juice potato salad supremacy over mayo sorry not sorry! This included dill and parsley as well as some crunchy celery :))
