  • 2 medium-sized chicken breasts, chopped into bite-sized chunks
  • 1 standard tin chickpeas, drained and rinsed
  • 1 large onion, finely diced
  • 1 good glug vegetable oil
  • 2 heaped spoonfuls curry powder or medium curry paste
  • 1 regular tin chopped tomatoes
  • 2 big handfuls fresh baby spinach
  • 1 brimming mug white basmati rice
  • 1 half-tub plain Greek-style yogurt
  • 0.33 long piece cucumber, grated
  • 1 generous pinch salt and cracked black pepper
