  • 1 generous drizzle extra virgin olive oil
  • 1 large white onion, finely chopped
  • 2 handfuls carrots, chopped into small chunks
  • 2 stalks celery, finely sliced
  • 4 cloves garlic, smashed and minced
  • 1 good squeeze tomato purée
  • 1 healthy glug dry red wine
  • 1 large jar tomato passata
  • 3 whole bay leaves
