  • 3 medium beetroots, peeled and cubed
  • 1 can chickpeas, drained and pan fried in cumin
  • 1 block halloumi cheese, sliced
  • 1 handful fresh coriander, chopped
  • 0.5 bulb red onion, very finely diced
  • 1 small handful slivered almonds
  • 1 glug extra virgin olive oil
  • 1 good squeeze lemon juice
  • 1 pinch sea salt
  • 1 pinch black pepper
