Prototyping a pasta I had a few months ago at some pasta restaurant in Lisbon. Tarragon sausage and almost like a bearnaise style base with white wine vinegar, grano padano, yolk and plenty of pasta water

  • 2 links pork sausage meat (casings removed)
  • 1 handful fresh tarragon (finely chopped)
  • 1 bundle fresh pappardelle pasta
  • 1 small bunch green beans (trimmed)
  • 1 dollop unsalted butter
  • 1 swig white wine vinegar
  • 2 units large egg yolks
  • 1 hefty cloud finely grated Grana Padano
  • 1 pinch sea salt
  • 2 pinches freshly cracked black pepper
  • 1 ladleful starchy pasta water
