  • 3 handfuls boiled potatoes, roughly mashed
  • 1 handful boiled black chickpeas (kala chana)
  • 2 pinches roasted cumin powder
  • 1 palmful fresh cilantro, finely chopped
  • 1 large bunch fresh mint leaves
  • 1 small bunch fresh coriander
  • 1 knob fresh ginger
  • 2 small green chilies
  • 1 splash lemon juice
  • 1 big jug chilled water
  • 2 dollops sweet tamarind chutney
  • 1 handful salty boondi (fried gram flour droplets)
  • 1 fingers-worth red onion, finely chopped
