  • 1 large eggplant
  • 1 glug olive oil
  • 1 large onion, diced
  • 1 handful red bell pepper, roughly chopped
  • 12 pieces meatballs (beef or lamb)
  • 1 generous palmful Tajine spice blend
  • 1 can chickpeas, drained
  • 1 hearty swig tomato passata or crushed tomatoes
  • 1 mugful dry couscous
  • 1 pinch salt and pepper to taste
