  • 5 thick strips pork belly slices
  • 1 thumb-sized piece fresh ginger, sliced into batons
  • 1 whole bulb garlic, cut in half horizontally
  • 3 whole pods star anise
  • 1 generous glug regular soy sauce (Kikkoman)
  • 1 Really heavy glug light soy sauce
  • 3 Tbsp demerara sugar
  • 1 hearty shake Chinese 5 spice powder
  • 1 pinch crushed chilli flakes
  • 1 cup water (enough to cover)
  • 2 bowls cooked mixed wild/red rice
  • 1 fistful shredded cabbage (napa or savoy)
  • 1 handful julienned carrots
