Chinese-style pork belly with a soy sauce glaze (if this were masterchef they’d call it a jus 🧑🍳)

- •5 thick strips pork belly slices
- •1 thumb-sized piece fresh ginger, sliced into batons
- •1 whole bulb garlic, cut in half horizontally
- •3 whole pods star anise
- •1 generous glug regular soy sauce (Kikkoman)
- •1 Really heavy glug light soy sauce
- •3 Tbsp demerara sugar
- •1 hearty shake Chinese 5 spice powder
- •1 pinch crushed chilli flakes
- •1 cup water (enough to cover)
- •2 bowls cooked mixed wild/red rice
- •1 fistful shredded cabbage (napa or savoy)
- •1 handful julienned carrots
