  • 1.5 mugs long-grain white rice
  • 1 standard can black beans, drained and rinsed
  • 2 medium carrots, peeled and diced into rounds
  • 1 heaping fistful fresh baby spinach
  • 1 palm-full ground cumin
  • 1 thumb-sized pinch ground cinnamon
  • 1 glug olive oil
  • 2.5 mugs vegetable stock or water
  • 1 generous pinch salt and cracked black pepper
