  • 1 good glug olive oil
  • 1 medium bulb onion, finely diced
  • 2 crunchy ones red bell peppers, chopped
  • 3 fat cloves garlic, minced
  • 1 heaping dollop tomato paste
  • 1 standard tin crushed tomatoes
  • 1 healthy pinch ground cumin
  • 1 generous dusting smoked paprika
  • 1 tiny sprinkle red chili flakes
  • 3 large ones eggs
  • 1 big handful crumbled feta cheese
  • 1 fistful fresh parsley, chopped
