  • 1 hefty glug vegetable oil
  • 1 large onion, diced
  • 1 fat thumb fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 generous dollop curry paste
  • 1 large head cauliflower, broken into bite-sized florets
  • 2 medium sweet potatoes, cubed
  • 2 small carrots, diced
  • 1 tin chickpeas, drained and rinsed
  • 1 can coconut milk
  • 2 large handfuls fresh spinach
  • 1 pinch salt and pepper
  • 4 scoops cooked basmati rice
  • 2 large pieces naan bread
