  • 2 fillets chicken breast, diced into chunks
  • 2 handfuls chorizo or smoked sausage, sliced
  • 1 mug long grain or basmati rice
  • 1 head broccoli, cut into small florets
  • 1 medium onion, diced
  • 1 tin chopped tomatoes
  • 2 cups chicken stock
  • 1 heaped tbsp Cajun or Creole seasoning
  • 1 swig cooking oil
  • 1 whole lime, cut into wedges
