  • 1 large eggplant
  • 2 fat dollops tahini
  • 2 good squeezes lemon juice
  • 1 pinch salt
  • 1 handful pomegranate seeds
  • 1 small bunch fresh parsley, chopped
  • 1 handful cooked chickpeas
  • 1 handful cooked red kidney beans

  • 0.5 handful diced yellow bell pepper
