  • 1 large piece (approx. 1.2kg) pork knuckle (ham hock)
  • 500 ml dark beer
  • 2 items onions (1 chopped for roasting, 1 sliced for sauerkraut)
  • 4 cloves garlic
  • 1 tsp caraway seeds
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 500 grams sauerkraut, drained
  • 100 ml dry white wine
  • 5 items juniper berries
  • 2 cups all-purpose flour
  • 3 large eggs
  • 0.5 cups milk
  • 3 tbsp butter
  • 0.25 tsp nutmeg
  • 1 tbsp fresh parsley, chopped
