  • 1 good glug extra virgin olive oil
  • 2 handfuls chicken thigh pieces, bite-sized
  • 10 pieces large shrimp, peeled and deveined
  • 2 handfuls paella rice (Bomba or Calasparra)
  • 1 handful red bell pepper, chopped into strips
  • 1 handful flat green beans, cut into segments
  • 3 cloves garlic, finely minced
  • 2 dollops grated fresh tomato or tomato purée
  • 1 pinch saffron threads
  • 1 generous sprinkle smoked paprika (pimentón)
  • 3 cups hot chicken or seafood stock
  • 1 pinch sea salt
  • 1 wedge lemon for serving
