  • 1 handful large raw prawns, peeled and deveined
  • 2 big pinches Cajun seasoning
  • 1 mug white long-grain rice
  • 0.5 whole fresh pineapple, finely diced
  • 1 small red onion, half finely diced and half thinly sliced
  • 1 finger-length red chili, deseeded and finely chopped
  • 1 handful fresh coriander, roughly chopped
  • 1 large ripe avocado
  • 1 clove garlic, minced
  • 1 whole lime, juiced
  • 1 small tin sweetcorn, drained
  • 2 shakes Tajin seasoning
  • 1 handful cherry tomatoes, halved
  • 1 glug apple cider vinegar
  • 1 swig neutral oil for frying
