- •0.5 whole fresh pineapple, finely diced
- •1 small red onion, half finely diced and half thinly sliced
- •1 finger-length red chili, deseeded and finely chopped
- •1 handful fresh coriander, roughly chopped
- •1 large ripe avocado
- •1 clove garlic, minced
- •1 whole lime, juiced
- •1 small tin sweetcorn, drained
- •2 shakes Tajin seasoning
- •1 handful cherry tomatoes, halved
- •1 glug apple cider vinegar
- •1 swig neutral oil for frying
